Great Enchiladas

Hey all, I thought I'd share my new favorite recipe. I like it because it's fast and easy (an absolute prerequisite for me), delicious, versatile, and goes very well with those summer margaritas! Here it is:

Bean Enchiladas (Vegetarian, but not Vegan)

**1 to 1-1/2 cans (15 ounce) refried beans (I like the black beans the best), or you can make your own beans.
**1 8-oz package cream cheese
**1 small can (around 4 ounces) chopped green chiles.
**Regular or garlic salt to taste.
Mix all these ingredients together, adding more beans if you need them. Then spoon onto:
**10-12 whole wheat or whole grain tortillas
Roll up the tortillas, place in a glass baking dish (spray with non-stick spray first) and cover with:
**2 medium cans (8.5 ounces) of green enchilada sauce (or red, if you prefer)
**Grated cheese, your choice, for the final layer.
Bake at 400 degrees for about 25 minutes (note: you might want to wait to add the cheese until the last 10 minutes or so).

If you prefer meat in your enchiladas, substitute about two-three cups chopped cooked chicken for the beans. They're just as good.

Oh, yes, and don't forget the margaritas or a Tecate or Corona beer to go with them!
